Yeah…this is kinda amazing..lol
Only 65 calories per serving….
AND…They’re vegan…
1 1/2 cups shredded raw zucchini (one medium)
1 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 large banana
1/2 cup white sugar
1/2 cup applesauce
1 teaspoon pure vanilla extract
DIRECTIONS
- Preheat oven to 350° F.
- Shred one medium zucchini in a food processor or with a hand grater. Set aside.
- Mix the flour, cocoa powder, baking soda, baking powder, salt, and spices in a separate bowl and set that aside.
- Mash the banana with the sugar, applesauce, and vanilla. Fold in the grated zucchini. Stir in the dry ingredients.
- Pour the batter into a lightly greased 9″ pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
Serves 16
And that’s it! We told everyone in the house they were brownies…and everyone actually thought they were! These are only 65 calories and only 1 gram of fat per serving!
